木棉花红色素的稳定化技术研究

摘    要:筛选了木棉花红色素的稳定化试剂。结果表明,0.05%柠檬酸、0.02%茶多酚和酰基化处理均能提高木棉花红色素的稳定性。色素的耐光性(2 200~2 300 lux)有不同程度提高,用阿魏酸酰基化的色素耐光性最好;色素的耐热性(30~80°C)显著改善;茶多酚能减缓氧化剂对木棉花红色素的破坏作用;而柠檬酸能减缓还原剂对木棉花红色素的破坏作用。

Abstract:Stabilizers were selected to carry out an experiment on the stabilization technology for the red pigment from kapok flower.The results indicated that the citric acid,the tea polyphenols and the acylation could enhance the stability of the pigment.The light and the heat resistance of the pigment were both improved effectively after a treatment by ferulic acid.Tea polyphenols could decrease the influence on pigment by oxidant while citric acid could relieve the influence on pigment by reducing agent.
