果胶的提取和应用

摘    要:果胶广泛存在于水果和蔬菜中,在柑桔皮中果胶含量约占干质的20%-30%,因而从柑桔皮中提取果胶具有很高的经济价值。提取果胶有很多种方法,其中酸法提取,乙醇沉淀可有效的提取柑桔中的果胶。果胶在食品工业和医药上有着广泛的应用。

Abstract:Pectin widely exist in fruits and vegetables, it is about 20% to 30% of the dry citrus peel is pectin, so extracting from the skin of citrus pectin has a high economic value. There are many types of pectin extraction methods.acid extraction, ethanol precipitation can be effective in the extraction of citrus pectin. Pectin in the food industry and medicine have a widely range of applications.
