桑叶茶中营养成分的测定与研究

摘    要:用火焰原子吸收法测定了浙江桐乡桑叶茶中6种矿物元素的含量;用相关的国家标准检验法测定了生物碱、酚性物、氨基酸、黄酮、总糖、Vc等有机物含量.结果显示桑叶茶中的矿物元素含量较高,其中最多的是K、Ca、Mg,比茶叶高出3~6倍不等;有机物中显示总糖、酚性物、氨基酸含量最大.实验结果证实由于桑叶叶面较薄,水浸出物较高为36.6%.结论:桑叶茶中含大量功能性营养保健成分,且易于浸出,有利于人体的吸收,适合各类人群饮用.

Abstract:The eight mineral elements in the mulberry leaves collected from Tongxiang city of Zhejiang were determined by means of AAS.The results showned that the quantities of all these elements were higher than that in other teas of China,among which the quantities of the elements K,Ca,and Mg were the highest.They are three to six times higher than those in the teas of China.In addition,this study adopted the related determination method of national standard to determinate the content quantities of organic matters,such as the alkaloid,phenol material,amino acids,flavonoids,total sugar,vitamin C etc.The results also indicated that total sugar,phenol material,amino acids presented the highest in quantity.The(analysis) and results provided a scientific foundation for medical function and edible values of the mulberry leaves.
