淀粉多晶体系的亚微晶结构研究

摘    要:通过对淀凝胶,预糊化淀粉以及不同状态的玉米原淀粉颗粒的广角X射线衍射研究,提出了在淀多晶体系中存在大量的介于微晶和非晶之间的亚微晶结构,同时明确了这三种结构在X射线衍射曲线中的对应区域,从而进一步揭示了人颗粒结构的实质。

Abstract:The submicrocrystalline structure of corn starch granules and pregelatinized starch is studied by wide_anger X_ray diffraction. This type of crystalline structure has not been reported before. It is concluded that the crystalline domains in the native starch consist of crystal, submicrocrystal and amorphous structures. The X_ray diffraction patterns characteristic of crystalline structure, sub_crystalline structure and non_crystalline structure are also presented.
