磷酸型两性淀粉结晶性质研究

摘    要:通过X射线衍射分析仪对一步法制备的磷酸型两性淀粉颗粒结晶结构进行了测定分析,结果发现:在玉米原淀粉中同时引入阴、阳离子官能团不会改变玉米原淀粉的X射线衍射图样的“A”型衍射特征,但却降低了淀粉颗粒结晶度,降低程序与阳离子取代度和阴、阳离子取代度比值大小有关。

Abstract:The crystallinity of phosphate amphoteric starch manufactured in simultaneous process was studied with examination of X_ray diffraction. The results indicated that `A' diffraction characteristic of the X_ray diffraction characters was not changed when the anionic and cationic groups were induced simultaneously in native starch, but the crystallinity decreased and the extent of decrease was related to cationic substituting degree and the ratio of anionic to cationic substituting degree.
