摘    要:应用原子吸收光谱法测定贵州种植的3种绿茶在不同沏茶温度时微量元素Cu、Fe、Ca、Pb的溶出含量,比较分析不同沏茶温度时的各种元素的溶出率,结果表明,同种绿茶中的同种微量元素在不同温度时溶出率不同,不同种绿茶中的同种微量元素在相同的温度下溶出率也不同,结合人体对微量元素需求,沏茶水温最好在70~80℃之间为宜。

Abstract:Making tea at different water temperatures,leaching rates of trace elements of copper,iron,calcium and lead in three kinds of green tea planted in Guizhou were discussed in this paper with atomic absorption spectroscopy(AAS).The results showed that at different temperatures,dissolution rate of an element in certain kind of tea was variable,even for the same element in different kinds.And when human needs of trace elements were taken into consideration,the most appropriate temperatures were between 70℃~80℃.
