摘    要:短梗霉多糖系短梗霉发酵产物,它具有巨大的经济价值。短梗霉是一种多形态真菌,具有复杂的生活史,并且其形态学变化与其多糖合成之间关系密切。本文就短梗霉及其发酵特点进行较详细的综述。

Abstract:Pullulan is a polysaccharide produced by Aureobasidium pullulans with great economic value. Aureobasidium pullulans is a polymorphic fungus and has a complex polymorphic life cycle. There is a close relationship between the cell morphology and formation of the pullulan. The Aureobasidium pullulsns and its fermentation character were discussed in the paper.
