| 摘 要： | 食品中丙烯酰胺的存在及其对人类健康的潜在危害引起国际上对其毒性的关注。世界各国科学家进行了广泛深入的研究,在丙烯酰胺神经、生殖、遗传及致癌毒性等方面的研究均有所进展。虽然动物实验已经证实了丙烯酰胺的各种毒性,但食品中丙烯酰胺对人体健康的不良作用还需进一步研究。

| Abstract: | The existence of acrylamide in food and its potential danger to human body have caused extensive attention internationally.Many studies have been carried out,particularly on the neurotoxicity,reproductive toxicity,genotoxicity and carcinogenicity of acrylamide.Although the toxicological effects of acrylamide have been studied in animal models,the potential negative effect of dietary acrylamide on human beings remained to be further investigated. |
