苦荞部分营养成分分析及评价

摘    要:经测定苦荞蛋白质含量为10.18%,必需氨基酸含量为413.7%mg/gprotein。其限制性氨基酸仅为苏氨酸一种,苦荞蛋白质的氨基酸评分为88.5分。苦荞矿物质元素含量丰富,其中铁为32.8,锰为12.5,锌为21.4,铬为2.54,钼为1.66,锗为4.2,铜为4.3,钙为127(单位均为ppm).总黄酮含量为110mg/100g。苦荞具有很高的营养价值,并对中老年人具有多种预防保健功能,是一种急待开发利用的天然营养保健食品资源。

Abstract:The protein content of Fagopyrum tataricum is 10.18% and the essential amino acid content is 413.7 mg/g protein.The limiting amino acid is threonine and the amino acid score is 88.5.Fagopyrum tataricum is abundant in mineral elements.The content of Fe is 32.8,Mn is 12.5,Zn is 21.4,Cr is 2.54,Mo is 1.66,Ge is 4.2,Cu is 4.3,and Ca is 127 ppm.The flavonoid content of it is 110 mg/100g.Fatopyrum tataricum is nutritious and has health protection effect for older people.It is a natural food resource of nutritious and health effect to be used.
