九龙牦牛产肉性能的研究(二报)

摘    要:九龙牦牛产肉性能和肉质特性研究是九龙牦牛种质特性测定的重要内容。1989年10月在九龙县斜卡乡对九龙牦牛斜卡类系的2.5岁公牛、4.5岁公牛和阉牛及洪坝类系的4.5岁阉牛的胴体性能进行了测定,对肉样的化学成分进行了分析,同时测定了肉样的氨基酸含量。试验中还对肌肉 PH,系水率,肉的贮存损失和烹调损失,脂肪的熔点和碘价等肉质特性进行了测定和研究。结果表明九龙牦牛表现出良好的产肉性能。为九龙牦牛的选育和牦牛肉质特性研究提供了重要的科学依据。

Abstract:Studyics on beef production performances and beef quality characters are important contents of the determination of breeding characters in Jiulong Yak.In 1989,the authors have determined carcass characters of Yak including 2.5-year-old and 4.5-year-old bulls of Xieka line and 4.5 year-old bull of Hong Ba line in Jiulong County and have ana- lysed chemical compositions of beef,and have determined their contents of amino acid, mean while the authors have determined the beef quality characters such as PH of beef, Water-holding Capacity of beef,rate of beef in storing loss,rate of beef in Cooking loss, melting point of fat and iodine number of fat,etc.The results not only show that the beef production performaces of Jiulong Yak are good but may provid an important theoretical basis for selecting and breeding of Jiulong Yak and research oF breef quality Characters of Yak.
