摘    要:In this work, some treatments of the orange roughy oil have investigated by analysis of UV - Visible spectra and gas chromatography. When the raw oil is treated by thepartial hydrogenation under ordinary pressure at 100℃, not only the highly unsaturatcd fatty oil will be reduced partially, but also the odor and re - odor of the fish oil would be decreased.
