云南乳杆菌资源调查研究

摘    要:对乳扇、酥油奶渣、乳饼等云南传统乳制品,云南泡菜、青贮饲料及鸡嗉囔内容物中乳杆菌进行调查.由125份样品中,共分离到363株乳杆菌,鉴定出36种(亚种).基本查清了以上生境中乳杆菌种类及优势种群分布情况.为我省乳杆菌资源开发,乳酸发酵剂、益生素、细菌饲料添加剂及微生态制剂的筛选利用奠定了基础.

Abstract:strains Lactobacillus spp.were isolated from 125 differential specimen of yunnan traditional dairy product(dairy slice,dairy cake,crisp dairy cream and dairy dregs),yunnan Krauts and pickles,maize silage and chicken's stomach.They have been identified as 36 differential species.Main microbiota and species of lactobacillus in those species have been learned from this investigation.Those results provide scientific principle of research and application for lactic acid ferment,bacterial additive and lactobacillus resources exploitation in yunnan province.
