Abstract:Sorbic acid is a kind of food preservative,it has high efficiency and no toxicity.Sorbic acid characteristic,7 synthetic ways and 3 punfication ways had been introduced in this thesis.Sorbic acid's antiputrefactive mechanism and applied prospective had been expounded.Proposals for developing sorbic acid in china had been put forward.
