葡萄浆果成熟过程中色素的变化及相互关系

摘    要:以葡萄早熟品种京亚和晚熟品种夕阳红为试材,研究了浆果成熟过程中各色素发育的规律及相互关系.试验结果表明:果实成熟着色过程中,两品种果皮中花青苷含量呈上升趋势,叶绿素含量、叶绿素b/a呈下降趋势,类胡萝卜素含量先降低后升高.葡萄浆果着色是花青苷含量增加和叶绿素含量降低的共同结果.果皮叶绿素含量、叶绿素b/a均与花青苷含量呈极显著负相关关系,而类胡萝卜素含量与花青苷含量间无显著相关性。

Abstract:Adopting the early cutivar Jingya and the late cutivar Xiyanghong as the experiment material to research the regulation and correlation of the growth of various pigments in the mature process of fruits, the anthocyanin content contained in the two cutivars above-mentioned assumes the trend of going up. On the contrary, the chlorophyll and chlorophyll b/a content assume the tendency of descending. The carotenoid content goes down first, and then goes up. The dying of the grape is the result of both the ascending of the anthocyanin content and the desending of the chlorophyll content. The chlorophyll and the chlorophyll b/a in the skin of berry have great correlation to the anthocyanin content; however, the carotenoid content has no remarkable relativity to the anthocyanin content.
