酶解法提取草鱼鱼鳞胶原蛋白的工艺研究

摘    要:对酶解法提取草鱼鱼鳞胶原蛋白的工艺进行了研究,以胶原蛋白提取率作为评价指标,选择选择酶解温度、pH值、加酶量、酶解时间作为考察因素,进行了正交试验,确定最佳的提取工艺方案为A2B2C3D1,即酶解温度30℃,pH值4,加酶量2%,酶解时间1h.在该条件下草鱼鱼鳞胶原蛋白提取率为92.28%.

Studies on enzymatic hydrolysis extraction of collagen from grass carp fish scale

Abstract:The enzymatic hydrolysis extraction of collagen from grass carp fish scale was studied. The extraction rate was taken as the e- valuation index and hydrolysis temperature, pH, enzyme dosage, and reaction time as the investigation factors. The orthogonal experi- ment determined the best solution for the extraction process as A2B2C3D1, namely hydrolysis temperature 30 ℃, pH value 4, enzyme dosage 2% and the reaction time lh. Under these conditions, the extraction rate of collagen from grass carp fish scale is 92.28%.
