麦草膳食纤维的制备与性质

摘    要:利用提取麦绿素后剩余的黑麦草残渣制备膳食纤维,分别采用水、1.5%柠檬酸和95%乙醇处理麦草膳食纤维,并测定了麦草膳食纤维的组成。结果表明:制备的麦草膳食纤维的总含量为54.35%~73.98%,其中纤维素16.72%~44.59%、半纤维素4.24%~9.63%、木质素为23.81%~29.99%;其吸油能力、持水能力、膨胀力和阳离子交换能力分别为2.7~5.6g/g(油/干纤维),4.7~6.9g/g(水/干纤维),7.4~8.8cm3/g,0.47~0.69meq/g干纤维。

Abstract:Dietary fiber was prepared from rye-grass residue pre-treated by water, 1.5%citric acid as well as 95% alcohol, and its physical and chemical properties were determined and compared. The result showed that the rye-grass dietary fiber contains 4.24%~9.63% hemicellulose, 16.72%~44.59% cellulose and 23.81%~29.99% lignin , and its capacity of the expansive, water holding, oil-holding and cation exchange were 7.4~8.8 cm~3/g , 4.7~6.9 g/g, 2.7~5.6 g/g and 0.47~0.69 meq/g respectively.
