野菜硝酸盐、亚硝酸盐含量及抗氧化酶活性分析

摘    要:测定了水芹、鸭舌草和小藜3种野莱的硝酸盐、亚硝酸盐、维生素C含量和几种抗氧化酶活性,结果表明:水芹和鸭舌草的硝酸盐含量达到了一级标准,小藜却严重超标;3种野莱的亚硝酸盐含量均符合我国制定的无公害蔬菜对亚硝酸盐的限量标准;水芹还具有较高的超氧化物歧化酶(SOD)活性.指出水芹是食用野菜较好的选择,小藜则不宜食用。

Abstract:The contents of nitrate,nitrite,Vitamin C and the activities of antioxidant enzyme in Oenanthe javanica(Bl.)OC.,Monochoria vaginalis(Burm.f) Presl ex Kunth and Chenopodium serotinum L.were determined.The results indicated that the contents of nitrate in Oenanthe javanica(Bl.)OC.and Monochoria vaginalis(Burm.f) Presl ex Kunth are lower than the critical content of the first level,but the content in Chenopodium serotinum L.is high.The content of nitrite in the three edible wild vegetables reaches the standard of harmless vegetables.And the activity of SOD in Oenanthe javanica(Bl.)OC.is high.These results showed that Oenanthe javanica(Bl.)OC.has good quality while Chenopodium serotinum L.is not an edible one for high nitrate content.
