茯苓、山药老年固体保健饮料的研制

摘    要:采用药食同源的茯苓和山药为原料,研制一种老年人固体保健型饮料.实验探讨了茯苓的提取条件,并通过正交试验确定产品的最佳配方.结果表明:采用蛋白酶水解和乙醇提取的方法能显著提高茯苓有效成分的提取率;在制备的基料中加入20%脱脂大豆粉、0.4%抗坏血酸钙、少量维生素B1、B2和0.3%CMC、10%麦芽糊精以及适量的调味剂,所制成的产品冲调后滑润适口,香味纯正,其营养组成和保健作用符合中老年人的生理与营养要求.

Abstract:In this paper is studied the technique of preparation of the solid health beverage for the aged containing Poria cocos and Dioscorea opposita. Experiments were conducted to investigate the extraction conditions of Poria cocos, with the optimal recipe determined by orthogonal test. Results obtained have shown that the extraction rate of the biologically active substance from Poria cocos was significantly raised by proteolysis and by ethanol extraction. To the base material were added 20% degreased soybean powder, 0. 4 % calcium L-ascorbate, small quantities of vitamins B1 and B2, 0. 3% CMCNa, 10% malt dextrin, and proper amount of flavor enhancer. The finished product is palatable, fragrant, and nutrtive for the aged.
