酶法制备明胶的新工艺研究

摘    要:阐述了一种酶法制备明胶的新工艺,并对酶用量、酶解温度、酶解时间、溶胶温度、溶胶初始pH值等参数进行了优化。同时,还测定了产品的理化性质。研究表明新工艺生产周期短(7~10d),环境污染小,产率高。

Abstract:A new process for preparation of gelatin with enzyme was described. The neutral protease dosage, temperature and time for enzyme treatment, the temperature and original pH value for gelatin extraction were optimized. The physical and chemical properties of gelatin were detected.The process had the advantages of short production period (7~10days), slight environmental pollution and high yield of gelatin.
