摘    要:通过研究发现苹果皮色素对pH值、热稳定性差,常见金属离子对苹果皮色素没有影响,该色素着色能力强,是一种值得开发与利用的天然色素。

Abstract:The edible natural pigment,with advantagcs of high safty property,closeness to naturalcolour and nutritions and pharmacologically effective,has grdually replaced the arfificial syn-thetic pigment which does great harm to human body,Because of its wide application. Nowmajor efforts are being devobed to the study and development and utilization of natural pig-ment by countries all over the world.Malus pumila Mill,is an arbor belongs to the rose family. Its fruits can be eaten raw,and they are good materials for food processing. However,studies on the extraction of its sta-bility and application are not rcported so far.The paper attempts to study the extraction of the apple pigmcnt and its phydical andchemical charactcr. The study shows that therc is a rich source for extraction of thc purpleplgment in apple peel. The extraction techonlogy is simplc and convinient,being most effec-tive under condition of 80- 90℃, 20- 30min, and the maximum absorbing spectrum being λ= 330nm, with strong colouring ability, high safty propety, and bettcr ocidatc - resistantabibity. The common metalion and sweetcncr have no obvious bearing on thc pigment. It hasinferier heat - resistant and reduction - resistant quality. The purple pigment of the applepeel is brightly-coloured under acid condition and can bc widely used in the colouring of acidfood. Therefore,It is a natural edible pigment that is worth exploiting and maleing use of .
