| 摘 要： | 为评价六种不同产地品种高粱面粉甲醇提取物的抗氧化活性,测定了高粱面粉甲醇提取物的总酚含量、缩合单宁含量,以及还原能力;并分析了高粱面粉提取物抗氧化强弱与活性成分之间的相关性情况。结果表明,高粱面粉甲醇提取物均具有较强的抗氧化活性,其强弱与高粱的品种有关,并且与高粱提取物中总酚的含量相关,与缩合单宁的含量没有相关性。为筛选高抗氧化活性的高粱资源提供实验依据。
