柑桔果汁电学性质变化规律的研究

摘    要:介绍了紫外辐射处理柑桔后,柑桔果汁的电学性质随酸度和时间变化的实验结果.在对实验结果定性分析的基础上,从统计物理角度并应用速度反应理论,对柑桔果汁的电阻与酸度,时间的关系给予微观解释和定量的分析,为寻求物理检测柑桔手段提供初步的理论根据.

Abstract:The following article presents the experimental data concerning the electrical properties of orange juice treated with nltraviolct rays changing with variation of their acidity and lime. On the basis of qualitative analyses of the experimental results and by using the theory of velocity reaction, the relationship between the orange's resistance and its acidity and time is microcosmically explained from the angle of statistical physics and analyzed quantitatively so as to lay tin initial theoretical foundation of orange testing through physical means.
