摘    要:食用菌因其营养价值高被世界营养学家推荐为世界十大健康食品之一。为了解该产品在消费者尤其是青年消费群体中的认知程度与消费偏好,通过湘、黑两省的调查与比较,发现两省青年消费群体对食用菌的关注程度均不高,信息获取渠道主要是电视、亲友介绍、网络、报刊等;食用菌消费频率与数量较低,尚未形成固定的消费习惯;涉及食用菌消费安全的关注点两省也基本相似,但在参与该产业发展程度上,湖南的年轻人比黑龙江的年轻人更富有主动性与冒险意识。在此基础上,提出促进青年消费群体增加食用菌消费的对策建议。

Abstract:The edible mushrooms are recommended as one of ten healthy foods by nutritionists in the world because of their nutritional value.In order to know the cognition levels and consumption preferences of consumers especially young consumer groups to mushroom foods,the investigation and comparison of Hunan and Heilongjiang were made,and the results show that the young consumer groups of the two provinces only pay less attention to the edible mushrooms,their main information channels are television,relatives' and friends' introduction,network,and newspapers/periodicals,etc.,the consumption frequency and consumption quantity of edible mushrooms are lower,and fixed consumption custom consumption custom consuming habits haven't yet formed,the concerns on consumption security of edible mushroom of the two provinces are basically similar,but as for the degree of participating in the development of mushroom industry,the young people of Hunan are richer in activity and venture spirit than the young people of Heilongjiang.Based on this,some countermeasures and suggestions on promoting the increase of edible mushroom consumption of young consumer groups are put forward.
