摘    要:基质辅助激光解吸电离飞行时间质谱(Matrix-Assisted Laser Desorption Ionization Time of Flight Mass Spectrometry,MALDI-TOF MS)技术在食品、医药、化学等领域得到了广泛的应用.综述了MALDI-TOF MS技术的检测原理及特点,以及其在食品微生物鉴定、分型、溯源分析中的应用.MALDI-TOF MS技术在微生物检验检测上具有快速、准确、高效等优点,随着样本处理方式标准化、数据库的完善化、生物信息学工具使用化等问题的解决,这一技术将成为微生物检测鉴定领域的重要辅助工具.

Abstract:Matrix Assisted Laser Desorption Ionization Time of Flight Mass Spectrometry(MALDI-TOF MS) technology has been widely used in food,medicine,chemical,and other fields.This paper reviews that the detection principles and characteristics of MALDI-TOF MS technology and its application in food microbiological identification,classification,traceability analysis.MALDI-TOF MS technology has advantages of rapid,accurate and efficient in microbiological detection.With the standardization of sample handling,improvemant of databases,and the problems of bioinformatics tool application,being solved,this technology will be important assistive tool in the field of microbiological detection and identification.
