摘    要:化学添加剂通过加入食品中已经全面进入了人们的生活。一些化学添加剂的违规使用和大剂量滥用,造成了一系列严重的食品安全事件。对于这些化学添加剂的危害和检测方法的研究以及对食品安全的监控已经迫在眉睫。本文对添加于食品中的多种化学添加剂,从毒理作用和检测方法方面进行了概述。

Abstract:Chemical additives have entered people's lives by being added in food.Some of the illegal use of chemical additives and high-does abuse resulted in a series of serious food safety incidents.So the research about the hazards of these chemical additives and the detection method is extremely urgent.The overview about various chemical additives which are added in food,toxicological effects and detection method.
