赛珍珠中国故乡风味宴菜单设计探析

摘    要:赛珍珠风味宴是以赛珍珠文化为主题,以镇江地域文化为内涵开发的特色风味宴,具有鲜明的地域性、民族性等特点。赛珍珠风味宴菜单设计应以目标顾客需求为主导,体现中西文化的交流和融合,围绕宴席主题、主导风味、主干菜品、时令季节、地方特色等原则设计和选择菜单菜品。

Abstract:The feast of Pearl S. Buck's Chinese hometown flavor should be based on the theme of Pearl S. Buck culture. The feast with specially regional feature and national characteristics is developed according to the connotation of Zhenjiang local culture. Design of the feast menu of Pearl S. Buck's Chinese hometown flavor should focus on the target customers' demand and shows interaction and communication of Eastern and Western cultures. The memu should be designed according to the principles of the feast theme, leading flavor, main dishes, seasonal di- shes and local speciality.
