| Abstract: | The technology for the isolation of sweet potato fiber using sweet poptato residue and physicochemical properties for sweet potato fiber were studied. The result showed that the optimum isolation technology was using dregs of refined sugar. Determination of physicochemical properties of sweet potato fiber showed that sweet potato fiber was an excellent dietary fiber. |
