甘肃啤酒麦芽主要指标的检测分析

摘    要:对甘肃省内18家企业加工的啤酒麦芽主要理化指标进行了检测分析.结果表明:a-氨基氮含量为175.8mg/100g、库尔巴哈值为42.4%、糖化力为322wk、糖化时间8min,重金属无机砷(As)含量为0.06mg/kg、总汞(Hg)含量为0.01mg/kg、铅(Pb)含量为0.09mg/kg、镉(Cd)含量为0.03mg/kg、氟(F)含量为0.42mg/kg,黄曲霉毒素B1为阴性,农药残留含量极低,均达到了国家绿色食品的标准,为确定甘肃啤酒麦芽的品质和加快地方优质啤酒麦芽的发展提供了重要参考依据.

Abstract:The main physical and chemical indicators of beer malt were tested and analysed,which was processed by 18 enterprises located in Gansu province.The results showed that the contents of α-aminonitrogen,As,Hg,Pb,Cd and F were 175.8 mg/100 g,0.06 mg/kg,0.01 mg/kg,0.09 mg/kg,0.03 mg/kg and 0.42 mg/kg,respectively.Kolbach index,Saccharification,and its time,were 42.4%,322 wk,8 min,respectively.The acitivity of aflatoxin B1 was negative.Furthermore,the contents of Pesticide residues were very low.All these have indicated that the main physical and chemical indicators of beer malt in Gansu meet the national standards of green food.Moreover,the paper can be used as an important reference to raise the quality of barley malt and speed up the development of local enterprises.
