摘    要:研究了TDP辐照对白酒化学组成和氢键缔合度的影响,经GC和NMR测试表明:处理后的各类酒中杂醇油含量降低幅度达54%—78%;低度酒中的总酯含量提高52.9%,甲醇和醛类含量降低26.8%和50.7%,缔合度明显增加,酒质大大提高;其它酒中的甲醇、醛类及总酯含量有升有降,酒质变化各异.

Abstract:In this article, the effect of TDP radiation on the chemical composition of the white spirits and the association degree of the hydrogen bond are studied. The tests of GC and NMR show: after being treated by TDP radiator, the content of hetcroalcohal in various white spirits decreases 54 %-78%, the total content of ester in low-degree white spirits increases 52.9%, the content of methanol and aldehyde respectively decrases 26.8 % and 50.7%, the association degree of the hydrogen bond clearly increases, and the quality of the white spirits is greatly improved; in the other white spirits, the total content of ester, the content of methanol and aldehyde increases or decreases, the quality of the white spirits varies.
