非离子表面活性剂在水果脱皮工艺中的应用

摘    要:本文从理论上分析了非离子表面活性剂作为化学脱皮液添加剂的可行性,并通过实验验证了这些分析。实验结果表明:在水果脱皮液中添加少量非离子表面活性剂,可以缩短脱皮时间,降低脱皮温度,改善表面光洁度.

Abstract:In the paper,we analysed theoretically the feasibility of nonionic surfactant being used as additives of chemical peeling solution and we tested and verified all the analysis with experiment.The result indicates that the addition of a proper nonionic surfactant into the fruit peeling solution can shorten the time of peeling,decrecase the temperature and smooth the surface of the fruit.
