香椿芽硝酸盐含量与硝酸还原酶活性的研究

摘    要:选择安徽歙县、四川遂宁、江西九连山、河南南阳、河南焦作、河北石家庄、河南郑州、山东泰安等8个种源的香椿芽为实验材料,对其硝酸盐含量、硝酸还原酶活性及其相关关系进行了比较研究.结果表明:不同种源香椿芽硝酸盐含量和硝酸还原酶活性不同.硝酸盐含量较低的为江西九连山、河南焦作和安徽歙县种源,是较为理想的食用种源,在四个不同采摘时期,硝酸还原酶活性较高的几乎都是江西九连山种源和河南焦作种源,其余种源的硝酸还原酶活性相对较低.硝酸盐含量和硝酸还原酶活性之间的关系可用相关方程来拟合,除采摘的第一个时期外,后三个时期不同种源香椿芽硝酸盐含量和硝酸还原酶活性显著或极显著负相关.

Abstract:The changes of contents of nitrate, activities of nitrate reductase and the correlation of both were studied comparatively in buds of eight different Toona s inensis provenances, which were from Xixian of Anhui, Suining of Sichuan,Jiulianshan of Jiangxi,Nanyang of Henan,Jiaozuo of Henan,Shijiazhuang of Hebei,Zhengzhou of Henan and Tai' an of Shandong. The results showed that the contents of nitrate and activities of nitrate reductase were significantly different at the same time. We choosed three provenances of Jiulianshan of Jiangxi, Jiaozuo of Henan and Xixian of Anhui as the ideal ones for edible, because their nitrate contents were low relatively. At four different edible phases, activities of nitrate reductase were high in provenances of Jiulianshan of Jiangxi and Jiaozuo of Henan, while others were low relatively. The relation of contents of nitrate and activities of nitrate reductase can be fitted by correlated equation, and they had negative correlation significantly at the last three edible phases except the first phase.
