摘 要: | 本文通过实验得出在双酶法饴糖生产的糖化阶段。使用麸皮复合糖化剂的操作条件:温度(T),58~62℃;pH,5.2~5.8;糖化时间(t),3小时,用麸皮复合粉剂工艺生产的饴糖,口感好、产率高。

Abstract: | This paper discusses how to produce maltose by wheat bran compound sacc-harifiction pharmaceutical. we got the conditions of saccharifiction as: T = 58~62℃, PH = 5.0~5.8, saccharifiction 3hr.The special flavour, person's senseand per yield of the maltose are satisfactory. |
