摘    要:采用先进的柱后衍生高效液相色谱技术,测定了深水网箱养殖的大黄鱼、传统网箱养殖的大黄鱼和野生大黄鱼的肌肉水解氨基酸组成及养殖大黄鱼血液中的游离氨基酸组成,同时还分析了鱼体肌肉的一般营养成分,结果表明:深水网箱养殖大黄鱼的肉质和口味明显好于传统网箱养殖大黄鱼,与野生大黄鱼具有可比性,并且已经形成特色,养殖和野生大黄鱼必需氨基酸的比值相对稳定,从而得出了大黄鱼必需氨基酸的组成模式。

Abstract:The contents of amino acids hydrolyzed in muscle and free amino acids in blood of both Pseudosciaena crocea which are cultured in deep water net cages, in traditional net cages and wild ones, are measured with advanced Post-Column Derivatizer technique together with HPLC, and the contents of biochemical composition in muscle are measured too. The results show that the quality of Pseudosciaena crocea in deep water net cages is superior to the one of the Pseudosciaena crocea in traditional net cages and approaches the one of wild Pseudosciaena crocea . The ratios of the content of the essential amino acids of Pseudosciaena crocea cultured in net cages and wild ones are relatively stable. Therefore, the pattern of composition of the essential amino asids is concluded.
