摘    要:优化化学法制备麦糟不溶性膳食纤维的碱溶工艺条件.通过单因素和正交试验,考察NaOH浓度、碱溶温度和碱溶时间对不溶性膳食纤维得率和不溶性膳食纤维中杂质含量的影响,分析因素的主次顺序和显著性,优化工艺条件.结果表明,在NaOH浓度0.375 moL/L,碱溶温度60℃,碱溶时间70 min条件下,制备得到麦糟不溶性膳食纤维的质量较高,验证试验不溶性膳食纤维得率为35.36%,不溶性膳食纤维中蛋白质质量分数为4.96%,综合评分为75.48,与正交试验结果75.57相差0.12%,结果可行.

Abstract:To optimize the technical conditions of alkali hydrolysis in insoluble dietary fiber processing,the effects of NaOH concentration,alkali hydrolysis temperature and time were investigated through the univariate trials and orthogonal trials.The optimal conditions were NaOH concentration 0.375 mol/L,alkali hydrolysis temperature 60℃ and alkali hydrolysis time 70 min.Under these conditions,the yield of insoluble dietary fiber was 35.63%,protein contents in insoluble dietary fiber were 4.89% and synthesizing evaluation score reached 76.39.The experimental values were in close agreement with the orthogonal trials value(75.57) with the difference of 0.12%.The result has a high application value.
