核桃外皮天然食用色素的提取与理化性质

摘    要:以核桃外皮为原料提取安全无毒的天然食用色素,并对其理化性质进行了测试研究.研究表明:该色素在一定条件下性质稳定,以核桃外皮为原料来生产食用色素,变废为宝,在食品工业中有很好的开发应用前景.

Abstract:The natural food pigment which is safe and nonpoisonous is extracted from the walnut outer peer and some tests nave been done for its physical-chemical properties. The research shows that the properties of this pigment are steady under some conditions. It has a great prospect in the exploration and application in food industry to produce the food pigment from the walnut outer peel.
