Abstract:Ozone is a strong oxidizing agent that has been effectively used to control growth of microorganism. Effects of ozone treatment on storage of fruits and vegetables are reviewed in this paper, which include influences of ozone to fruits and vegetables qualities, roles of ozone in fruits and vegetables postharvest physiologies, and influences of ozone to fruits and vegetables anticorrosiom.
