可溶性淀粉还原性研究

摘    要:
普通淀粉被制为可溶性淀粉时能显现还原性.其强度可用Somogyi比色法测定.进而可换算其平均分子量和聚合度.

Abstract:
The reductibibility of the dissoluble amylum can appear. When general starch is manufactured into the dissoluble amyhm. The intensity of its reductibility can be detected by the Somogyi' s colorimery. In this way. the dissoluble amylum's average molecular weight and polymerization degree can be calculated further.
