锯缘青蟹可溶性蛋白与可溶性糖的季节变化

摘    要:锯缘青蟹(Scylla serrata)是生活在河口海区的一种经济甲壳动物,环境温度对其生化组成具有重要影响,而其环境温度是随季节变化而不断变化.本研究采用生物化学方法对锯缘青蟹鳃、肝胰腺和肌肉等3种器官组织中可溶性蛋白和可溶性糖含量的季节变化进行研究.结果显示锯缘青蟹3种不同器官、组织中可溶性蛋白含量,均是夏季最低,冬季最高,春秋季介于2者之间.3者的变化趋势一致,春季后降低,夏季降至最低,然后秋季和冬季依次升高.3种不同器官、组织中可溶性糖含量均是春季最高,夏季最低,秋冬季介于2者之间.其变化趋势是春季后降低,夏季降至最低,然后秋季和冬季升高(肝胰腺)或依次升高(鳃和肌肉).本实验结论为锯缘青蟹鳃、肝胰腺和肌肉中可溶性蛋白的季节变化基本一致;不同器官组织中可溶性糖的季节变化也较为一致.但可溶性蛋白和可溶性糖之间的季节变化有差异,说明不同器官组织中同一生化成分的季节变化较为相似;不同生化成分的变化规律各异.

Abstract:Mud crab(Scylla serrata) is an important economic crustacea,living in estuary waters.Great impact on biochemistry composition in tissues always is exerted by environment temperature,which usually fluctuates with seasonal changes.In this work,biochemistry methods were used to measure seasonal soluble proteins and soluble saccharide in gill,hepatopancreas and muscle of S.serrata.The results show that soluble proteins in organs and tissues are the lowest in summer and the highest in winter.The change trends are conformable in different organs or tissues,namely,soluble proteins decrease after spring,get to the lowest in summer and increase in autumn and winter in order of precedence.Soluble saccharide in different organs and tissues are the highest in spring,and the lowest in summer.The change appear to be that soluble saccharide decrease after spring,get to the lowest in summer,then increase in autumn and winter(Hepatopancreas) or gradually increase in order(Gill and Muscle).The above results suggest that seasonal changes of soluble proteins are almost conformable in gill,hepatopancreas and muscle;seasonal changes of soluble saccharide are almost resemble in different organs and tissues,but there are some seasonal differences between the two components.
