摘    要:大量的研究表明,蔬菜硝酸盐的积累与蔬菜的种类、品种、器官组织以及生长期等内部因素有关,也与施肥、光照、温度、水分以及硝化抑制剂等外界因素有关.目前,在保证蔬菜高产的前提下,降低硝酸盐含量、提高品质是迫切需要解决的问题.本文就蔬菜中硝酸盐积累的生理机制、影响因素及调控措施进行了综述、

Abstract:Studies showed that the nitrate accumulation of vegetables has something to do with not only internal factors such as type, variety, organization and growth period, etc; but also external ones such as fertilizer, light, temperature, water, etc. At present, it is urgent to find a way to reduce nitrate content and improve quality of vegetables under the premise of high yield. The paper made a review on the physiological mechanism, the effect of factors and control measure on the nitrate accumulation of vegetables.
