茶的营养和药理作用研究

摘    要:茶为药用已有数千年历史.唐本草拾遗上提出,“诸药为各病之药,茶为万病之药”.茶具有消食利尿、兴奋神经、祛痰止渴、明目益思、消炎解毒的作用.最近的研究报道,茶具有抗癌效果和抗辐射作用,研究还确认,茶能控制糖尿病.对于茶的某种营养和药理作用应归功于茶的何种化学成分,众说不一.本文以恩施茶为材料,分析测定了其中的部分营养成分和无机元素含量,同时,还作了清除自由基的ESR试验.提供证据.

Abstract:The results of constituent analysis indicate that in tea and citrine produced in City Enshi there are rich vitamine, caffeine and inorganic elements. The content of essential trace elements in them are quite high and those of Fe, Zn and Mn are even higher. Vitamine C, Vitamine E and trace elements Zn and Mn in tea may have something to do with the anti-carcino-genesis and radioresistance of tea.It was found by ESR test that tea and citrine are capable of inhibiting lipid peroxidation and with the function of antimutagenesis while green citrine is even better than red citrine in these aspects.
