黔江肾豆营养成分分析

摘    要:该研究测定了重庆黔江肾豆的主要营养成分及矿物质元素质量分数.研究发现黔江肾豆粗蛋白质量分数为23.35%,蛋白质质量分数为14.28%,水解液总氨基酸质量分数为17.0%,总必需氨基酸质量分数为6.9%;粗脂肪质量分数为1.28%,不饱和脂肪酸质量分数较高,占总脂肪酸的83.0%,其中油酸为8.2%,亚油酸为22.2%,α-亚麻酸的质量分数均超过大豆、黑豆、豇豆和鹰嘴豆等豆科作物,占总脂肪酸质量分数的52.6%;总糖质量分数为53.47%,其中还原糖为1.70%,淀粉为51.77%;粗纤维为3.47%;主要矿质元素,铁:68.2μg/g,锌:42.9μg/g,钙:10.3μg/g,钾:7.3mg/g,镁:1.8mg/g,锰:16.5μg/g,铜:9.4μg/g,磷:2.62mg/g.可见黔江肾豆营养保健价值独特(特别富含α-亚麻酸),值得开发利用.

Abstract:The contents of major nutritional components and minerals of Qianjiang kidney bean were analyzed.Its crude protein content was 23.35%,the protein content was 14.28%,the total amino acid content was 17.0%,and the total essential amino acid content was 6.9%.Its crude fat content was 1.28% and unsaturated fatty acids accounted for 83.0% of the total fatty acids,in which the contents of oleic acid,linoleic acid and α-linolenic acid were 52.6%,8.2%,22.2%,respectively,being higher than those of other legumes,such as soybean,black soybean,cowpea and chickpea.The total sugar content was 53.47%,among which reducing sugar content was 1.70%,starch content was 51.77% and crude fiber content was 3.47%.The contents of the mineral elements Fe,Zn,Ca,K,Mg,Mn,Cu and P in the Qianjiang kidney bean were 68.2 μg/g,42.9 μg/g,10.3 μg/g,7.3 mg/g,1.8 mg/g,16.5 μg/g,9.4 μg/g and 2.62 mg/g,respectively.In conclusion,Qianjiang kidney bean is especially rich in α-linolenic acid,which is of great nutritional value,and therefore is worthy of further development and utilization.
