| 摘 要： | 采用凯氏定氮法、索氏提取法、蒽酮比色法、火焰原子吸收光谱法等对台湾乳白蚁的营养成分进行了初步分析,分别测定了台湾乳白蚁的蛋白质、脂肪、可溶性糖含量以及矿质元素如铁、铜、锰、锌、镁等的含量.研究结果表明,台湾乳白蚁蛋白质含量为16.86%;脂肪含量为10.09%;可溶性糖含量为0.39%;水分含量为70.42%;灰分含量为1.25%;矿质元素含量中铁为293.068 0μg/g;铜为20.911 4μg/g;锰为15.014 3μg/g;锌为62.861 0μg/g;镁为653.770 5μg/g.其营养价值高于一般的动物食品.

| Abstract: | The paper had given a preliminary analysis on the nutritional components of Coptotermes formosanus Shiraki by the conventional methods such as the atomic absorption spectrometry.The results showed that the contents of water,protein,fat,soluble sugar and ashes within the termite bodies were 70.42%,16.86%,10.09%,0.39% and 1.25% respectively.Contrast to the beef and mutton,Coptotermes formosanus contained much abundant mineral elements,the contents of Fe,Cu,Zn,Mn and Mg were 293.068 0 μg/g,20.911 4 μg/g,62.861 0 μg/g,15.014 3 μg/g,653.770 5 μg/g respectively. |
