摘    要:研究了毛细管电泳技术对食品中酚类抗氧化剂的分离分析,优化了包括检测电位、电泳分离缓冲溶液在内的相关分离检测参数,应用本技术成功地对食品中2种酚类抗氧化剂进行了分析。

Abstract:In this paper, an analytical method for phenolic antioxidants in food sample based on capillary electrophoresis separation is described. Parameters related to the separation and detection containing detection voltage and running buffer were optimized. The developed method was successfully applied for the determination of two antioxidants in commercial food.
