论餐饮命名文化

摘    要:餐饮企业在生产菜品、酒水等物质产品的同时还为客人提供文化大餐,在满足客人物质需要的同时,还满足了客人精神和心理需要。餐饮的灵魂是文化,文化是餐饮企业的竞争力和生命力所在。本文分析了餐饮命名的文化性,论述了餐厅、厅房和菜品的命名的意义,命名时应遵循的原则,并从文化的角度对餐厅、厅房和菜品名称进行了设计,指出餐饮命名时应注意的问题。

Abstract:F&B enterprises produce material products, such as vegetables, food, wine, drinks, etc and provide "cultural meal" for the guests as well. It can not only meet people' s material demand, but also satisfy guests in spirit and mentality. Culture, the soul of catering industry, is the key part of competition and the vitality in F&B enterprises. The thesis analyzes the cultural feature of the names about food and beverage; discusses meanings of the names about restaurants, dining halls, courses and the rules which we should obey over naming. The thesis also talks about the design about restaurants, dining halls, courses from the angle of culture, and points out the problems we should pay attention to over naming.
