超声波提取菠萝皮色素及其稳定性研究

摘    要:用正交试验对菠萝皮色素的超声提取工艺进行了筛选,并研究光照、温度、pH值、金属离子及常见添加剂等对其稳定性的影响.结果表明,提取的最佳工艺为:80%乙醇为提取剂,pH4.6,超声功率350W,超声时间20min,料液比1:10(mL:g);在此条件下,菠萝皮色素的最大吸收波长为280nm.菠萝皮色素稳定性较好,耐光耐热;在酸性环境中比较稳定;有较强的抗氧化性;抗坏血酸、金属离子Fe^2+和Cu^2+对该色素稳定性影响显著.

Abstract:The orthogonal tests of taking ultrasonic extraction pigment from pineapple peels were carried on to determined the optimal conditions and to study the stability of the pigment. The results indicated that the largest absorption spectrum of this pigment was 280nm, the optimal conditions were ultrasonic power 350w, extraction time was 20 min, the extractions was 80% ethanol distilled, liquid-solid ratio was 1 :10 (mL:g) . The pigment is stable to light and heet, and ability of resistance to oxidant is strong. It is irelatively stable in the acidic environment. Fe^2+, Cu^2+ and ascorbic acid have relative effect on it.
