Abstract:Oil extraction by aqueous enzymatic treatment technolclgy is a newly developing technology.This paper is basen the various factors affecting the enzmatic treatment of oil seeds and fruits.The different processes of this new technology;the main factors affecting their efficiency. as well as their applications are discussed.
