栝楼(Trichosanthes Kirilowii Maxim)叶的营养成分分析评价

摘    要:对栝楼叶基本营养成分及矿质元素含量进行实验室分析测定,并与常见的7种食叶蔬菜进行比较.实验结果表明,栝楼叶中蛋白质、粗纤维、VC、灰分、水分的质量分数分别为28.53%,5.95%,0.67%,10.70%,80.87%;以质量比计,K,Mg,P,Zn,Fe,Cu,Mn含量分别为1 737.71,446.07,804.20,3.45,19.61,2.48,5.62 mg/100 g.栝楼叶的营养成分较为全面和丰富,尤其是蛋白质、粗纤维、VC、K、Mg、P的含量远高于常见蔬菜,显示出具有较高的食用和营养价值.

Abstract:Nutrient components and the contents of mineral elements in leaves of Trichosanthes kirilowii Maxim have been analyzedand compared with leaves of seven common vegetables.The results showed that the respective content of protein,crude fibre,Vit C,ash,water was 28.53%,5.95%,0.67%,10.70%,80.87%.As for the mass ratio,content of mineral elements of K,Mg,P,Zn,Fe,Cu,Mn respectively was 1 737.71 mg/100 g,446.07 mg/100 g,804.20 mg/100 g,3.45 mg/100 g,19.61 mg/100 g,2.48 mg/100 g,5.62 mg/100 g.The leaves of Trichosanthes kirilowii Maxim are showed to have rich nutrition and various nutritional components,which showed its high edible and nutritive value,especially of the protein,crude fiber,Vit C,K,Mg,P.
