斑鳠的含肉率及肌肉营养价值评定

在实验室内测定4尾斑Hu（Mystus guttatus)的含肉率及其营养成分，并对其营养价值进行综合评定，该鱼（鲜样）含肉率73．37％肌肉中含粗蛋白19．60％，粗脂肪0．36％，粗灰分1．20％，水分3．18％，无氮浸出物0．33％，干物质中水解氨基酸总量84．63％，其中必需氨基酸36．19％，占氨基酸总量的42．77％，游离氨基酸总量593．96mg/100g；必需氨基酸指数为53．08；矿物质含量丰富，斑Hu是一种营养价值和养殖价值都较高的淡水优质鱼类。

Flesh Content and Its Nutritive Value of Mystus guttatus

The flesh content and nutritional composition of Mystus guttatus were determined.The fresh quality was also evaluated in nutrition. There is 73.37% of flesh in the body of Mystus guttatus. Among the flesh, the crude protein, crude fat,ash,moisture and nitrogen-free emersion of the fresh muscles are 19.60%,0.36%,1.20%,3.18% and 0.33%, respectively.In the dry matter of flesh,the amount of hydrolytic amino acids is 84.63%,in which the content of essential amino acids is 36.19%,making up 42.77% of total free amino acids. The content of total free amino acids is 593.96 mg/100g,and the essential amino acid index is 53.08.The flesh enriches minerals.Mystus guttatus is one of freshwater fishes with better nutritive value.
