斑鳠的含肉率及肌肉营养价值评定

摘    要:在实验室内测定4尾斑Hu(Mystus guttatus)的含肉率及其营养成分,并对其营养价值进行综合评定,该鱼(鲜样)含肉率73.37%肌肉中含粗蛋白19.60%,粗脂肪0.36%,粗灰分1.20%,水分3.18%,无氮浸出物0.33%,干物质中水解氨基酸总量84.63%,其中必需氨基酸36.19%,占氨基酸总量的42.77%,游离氨基酸总量593.96mg/100g;必需氨基酸指数为53.08;矿物质含量丰富,斑Hu是一种营养价值和养殖价值都较高的淡水优质鱼类。

Abstract:The flesh content and nutritional composition of Mystus guttatus were determined.The fresh quality was also evaluated in nutrition. There is 73.37% of flesh in the body of Mystus guttatus. Among the flesh, the crude protein, crude fat,ash,moisture and nitrogen-free emersion of the fresh muscles are 19.60%,0.36%,1.20%,3.18% and 0.33%, respectively.In the dry matter of flesh,the amount of hydrolytic amino acids is 84.63%,in which the content of essential amino acids is 36.19%,making up 42.77% of total free amino acids. The content of total free amino acids is 593.96 mg/100g,and the essential amino acid index is 53.08.The flesh enriches minerals.Mystus guttatus is one of freshwater fishes with better nutritive value.
