摘    要:
采用高效液相色谱和电喷雾质谱(ESI-MS)联用,从黑米皮的乙醇提取物中鉴定出两种花色苷化合物:矢车菊素-3-葡萄糖苷和芍药素-3-葡萄糖苷,二者的含量分别为38.0%和5.2%.

Abstract:
Anthocyanins in the ethanol extracts from black flee pigmented fraction were separated and identified by HPLC coupled with electrospmy ionization mass spectrometry. Our results demonstrated that the two major anthocyanins in the extract are cyanidin 3-glucoside and peonidin 3-glucoside by comparison with the authentic anthocyanins, and the contents of these two anthocyanins are 38.0% and 5.2%, respectively.
