“苽”之疏解

＂苽＂一名＂蒋＂,也写作＂菰＂,为禾本科菰属多年生宿根水生草本植物,是一种粮、菜兼用的作物。汉代以前,尤其唐代,苽米是主要的食用部分;唐以后,其米多用来救荒。＂苽＂在古文献中也称＂雕苽＂、＂雕胡＂。作为菜食用,始见于《尔雅》。宋之前,一般称为＂菰菜＂;至宋,始见＂茭白＂一名。＂茭＂得名于其根＂交结＂,＂白＂得名于其肉质茎色白。此名一直沿用至今。＂菰首＂也作＂菰手＂,是指茭白顶端白嫩、柔软似小孩手的部分。
